A good friend of mine, Amal, is a certified nutrition & health coach with a great passion for cooking and knowledge of healthy nutrition.

Being a brain cyst survivor, she has used food as medicine to uplift her journey. Here are the recipes she was kind enough to share with you:

Kale And Lentil Salad With Crispy Roasted Chickpeas:



  • 1 small head of kale

  • 200 gr. cooked lentils

  • 100gr. Roasted chickpeas

Classic Dijon Vinaigrette

  • 1 teaspoon Dijon mustard

  • 1 1/2 tablespoons red wine vinegar

  • 1/4 cup olive oil

  • Salt and freshly ground black pepper

  • 200 gr. cooked lentils

  • 100gr. Roasted chickpeas


  1. Rinse and drain the chickpeas.

  2. Dry the chickpeas with paper towels.

  3. Toss the chickpeas with olive oil and salt.

  4. Spread the chickpeas on a baking sheet. Drizzle with the oil and sprinkle with the salt.

  5. Roast the chickpeas for 20 to 30 minutes to 175C

Chia Pudding:


  • 3–4 Tablespoons chia seeds

  • 1 cup milk (I like unsweetened coconut, almond, or cashew milk)

  • 1/2 Tablespoon maple syrup, honey, or sweetener of choice

  • 1/4 teaspoon vanilla (optional)

  • Toppings of choice: fresh berries or other fruit, granola, nut butter, honey, etc


In a bowl or mason jar, stir together chia seeds, milk, maple syrup, and vanilla, and let it sit for 1-2 hours or overnight in the fridge.

When ready to serve, top the pudding with berries or your favourite choice.

Fluffy Caramel Sweet Potatoes Bowl:

Ingredients (customizable):

  • Sweet potato

  • Granola

  • Fresh blueberries

  • Almonds

  • Cacao Nibs

  • Goji Berries

  • Cinnamon

  • Ginger

  • Nutmeg


Bake the whole sweet potatoes, then peel and mash or puree and use that for the base of your bowl.

Add spices like cinnamon, ginger, nutmeg, and a pinch of sea salt.
